Grandma Shelly's Cabbage Rolls
1 Large Head of Cabbage ... cut out core and put in a large bowl , pour boiling water over the cabbage and cover. The leaves will soften and pull apart easily, drain and add more boiling water if they need more steaming.
Make your Rice , I use Long Grain, 6 cups of water, 3 cups of rice, salt and a bit of butter, Bring to a boil , and then reduce heat until rice is almost cooked , and very little water remains.
Chop up 1 medium white onion and saute in about 2 Tbsp of butter , add to the pot of cooked rice.
Mix into the rice about 1/2 to 3/4 cup ground pork , salt , pepper, and garlic salt to taste.
Cut the hard core veins out of your cabbage leaves , and wrap the rice mixture in the cabbage leaves.
Place into a small roaster that has been greased and lined with some of the cabbage leaves that are to small to roll.
Sauce:
1 can of Hunts Tomato Sauce
1/2 can of water ( use the tomato sauce can )
1 Tbsp of Brown Sugar
1/2 tsp of Lemon Juice

Decorated Cupcake " Little Pink Elephant "
This " Little Pink Elephant Cupcake" was on of my first attempts with my homemade fondant . I had never used or made fondant !! It was fun !! I really enjoy cake decorating , and am improving with each cake / cupcakes I decorate ...
Grandma Shelly's Sweet and Sour Meatballs
- 2 lbs Lean Ground Beef
- 1 Egg
- 1 tbsp Worcestershire Sauce
- 1/4 cup White Onion ( minced )
- 20 Unsalted Soda Crackers ( crushed )
- 1tsp Sea Salt
- 1/2 tsp Ground Black Pepper
- 1/2 tsp Garlic Powder
- Mix together in bowl, form meatballs, and brown in coconut oil , transfer to a casserole dish .... Mix Sweet and Sour Sauce and pour over Meatballs , bake at 350 degrees for about 30 to 45 min.
- SAUCE
- 1 cup Brown Sugar
- 1/2 cup Vinegar
- 2 tbsp Ketchup
- 1 tbsp Cornstarch
- 1tbsp Soya Sauce
- 1/2 cup Water

Grandma Shelly's Chili Con Carne
- 2 lbs. of Lean Ground Beef
- 3/4 cup White Onion (chopped)
- 1 small Yellow Pepper (chopped)
- 6 Large Mushrooms (Sliced )
- 2 tbsp of Worcestershire sauce
- 2 tsp of Chili Powder
- 1 tsp of Sea Salt
- 1 tsp of Brown Sugar
- 1 tsp of Vinegar
- 1/2 tsp of Ground Black Pepper
- 1/4 tsp Cayenne Pepper
- 1/8 tsp of Ground Cinnamon
- 1 cup of Salsa of your choice ( I use my Homemade Salsa )
- 1 - 14 oz can of Kidney Beans or Beans in Tomato Sauce , or Both
- 1 - 19 oz can of Diced Tomatoes
Brown the Lean Ground Beef in Oil of your Choice ( I use Coconut Oil ), add chopped Onion ,Yellow Pepper, and sliced Mushrooms , cook to blend flavours and then put into your slow cooker and the remaining ingredients , and let it simmer away ! I love my Chili Con Carne served on top of rice ! Great Meal for a cold Canadian Night !
